The Glossary

Sometimes it can appear that us bartenders are speaking in a foreign tongue, this page helps to get us all speaking the same language.

    L

    Layering

The skill of making one layer of liquid float on another based on its specific density, usually done by gently pouring the next layer of liquid down the back of a spoon onto the previous one.  Multi-layered drinks are often referred to as Pousse-Cafe drinks.

    Light Rum

Light in this case refers to the weight, or the body, of the rum not the colour, although in truth light rums are usually light in colour as well but not always.

In most cases when a cocktail calls for a light rum this is when white rum or a pale gold rum is the best choice.
